Game Day Recipe: 2 Easy Versions of Spinach Artichoke Dip

Who doesn’t like some great snacks to eat while you watch your favorite team win? Every Wednesday, I’ll be posting a “Game Day Recipe of the Week,” which gives you plenty of time to pick up the ingredients before you head off for tailgating or invite the guys (and gals) over for the game. These recipes are quick, easy, cheap, and oh-so-tasty!

Hot Spinach Artichoke Dip

Time to make: 30 minutes
Cost for ingredients: around $8 (a bit more if you have to buy butter or if you go for name-brand)
Serves: 5-10 people

Ingredients:
Big spoonful of butter
1 8-oz package of cream cheese
1 16-oz container of sour cream
1 small (6-10 oz) can/jar of artichoke hearts
1 small package of frozen spinach (thawed) or a few big handfuls of fresh spinach
3/4 cup grated cheese
1 clove garlic

  • Chop spinach, garlic, and artichoke hearts until they are very fine.
  • Melt butter in a large saucepan.
  • Add spinach and artichoke hearts. Cook for about 5 minutes.
  • Add cream cheese, sour cream, and garlic. Stir occasionally as you cook for about 10 minutes.
  • Add all but a small handful of cheese last. Stir until melted.
  • Dump warm dip into a bowl. Sprinkle a layer of cheese over top and microwave just until the cheese is melted.
  • Serve immediately with tortilla chips!

Cold Spinach Artichoke Dip
Time to make: 15 minutes
Cost for ingredients: around $5 (a bit more if you go for name-brand)
Serves: 5-10 people

Ingredients:
1 16-oz container of sour cream
10-12 oz of mayo
1 package of frozen spinach or a few big handfuls of fresh spinach
1 8- to 14-oz can/jar of artichoke hearts, drained
1 clove of garlic
1 cup of grated cheese

  • Finely chop artichoke hearts, spinach, and garlic.
  • Mix together all of the ingredients. Here’s a good measuring tip: add the sour cream to a bowl and then fill the container about 3/4 full of mayo and add that. Saves making measuring cups dirty!
  • Serve cold! This one gets better as it sits and the flavors meld together, so make it the night before or in the morning for an afternoon game.
